Old Canava :

The old traditional kanava, or winery, of CANAVA ROUSSOS receives visitors and hosts wine-tasting tours as well as make wine.

At harvest-time, traditional wine-making methods are followed using authentic Santorini installations, allowing many visitors to see the "treading" and then "'boiling" of the must in subterranean cisterns and huge barrels, and in some cases may actually experience the process.

New Canava:

The modern CANAVA ROUSSOS winery, housed in architecture harmonising with island customs, is the birthplace for the new generation of wines blending tradition and technology as seen in the stainless steel cisterns, the cherished press, refrigeration and bottling lines, but also the many oaken barrels.
